FoodSaver FM2100 Overview
First of all you need to know that one thing on Amazon is incorrect. Here are the facts.
IMPORTANT NOTE: THIS MODEL DOES NOT HAVE THE AUTOMATIC BAG DETECTION FEATURE
I know that the product description says that on Amazon. It has said that for as long as I can remember. However, I own this machine, and I promise you it does not have automatic bag detection.
If the automatic bag detection feature is a must-have for you, then this is NOT the model you want. Instead, you might consider one of these automatic models:

What is the Difference Between Automatic and Manual?
With a manual machine, you open the lid, lay the edge you want to seal across the sealing bar, close the machine and press the button to begin the sealing process.
With an automatic machine, you insert the edge of the bag you want to seal into the machine’s opening, and the machine senses the bag’s presence and automatically starts the sealing process.
Personally, I actually prefer the manual sealing method. Automatic sounds good, and I’m sure it could be handy, but lots of users complain that some machines can be contrary. For automation to work, there is a slight learning curve to get your bag placement just right, and you need patience and a stead hand. You also need bags with a very straight edge. For that you need to either use pre-cut bags or a machine with a built-in bag cutter. It’s very difficult to get a perfectly straight edge using scissors.
Of course that’s just me. You may decide you prefer automatic, but either way I have one suggestion on bags. My personal top choice is the Wevac Food Vacuum Seal Roll Keeper with Cutter (click to see on Amazon). Wevac gives you a high quality bag roll at a very reasonable price, and it comes in a sturdy box that has a built-in bag cutter. These are the only bags I use.
FM2100 Features
This FoodSaver model has optional settings for moist or dry foods, a removable drip tray, internal bag storage (for very small bag rolls), built-in bag cutter, and a 5 year limited warranty. This machine has an accessory port and comes with an accessory hose, but the handheld sealer is sold separately.

Drawbacks
There is a big difference between “moist” foods and liquids. Moist food includes poultry, fish, meat, and some fruits and vegetables. You shouldn’t have any trouble vacuum sealing these foods with the FM2100 because they have a limited amount of moisture.
Liquids are another story. Channel vacuum sealers like the FM2100 are not designed to handle liquids. That includes foods such as soups, sauces, gravy, and salsa. For that you would need a much more expensive chamber vacuum sealer.
The only other drawback I’m aware of is that the FM2100 is designed for what is considered average home use. It is not designed for prolonged, very heavy duty use. That is, it isn’t built to hold up for non-stop heavy use all day long for days in a row. For that reason it would not be the best choice for anyone who plans to do batch processing for long hours and days on end.
