Blueberry muffins have been a favorite of mine since childhood, and now I love baking them in my air fryer. This version is fast and simple and tastes absolutely wonderful.
8 Foil muffin cups with paper liners (or 8 silicone baking cups)
Ingredients
1 1/3cupall purpose flour
1/2cupgranulated sugar
2tspbaking powder
1/4tspsalt
1/3cupoil
1egg
1/2cupmilk
2/3cupfresh blueberries, or frozen and thawed
Instructions
Preheat air fryer to 330℉.
In medium bowl stir together flour, sugar, baking powder, and salt.
In separate bowl combine oil, egg, and milk, and mix well.
Add egg mixture to dry ingredients and stir just until moistened.
Gently stir in blueberries.
Spoon batter into muffin cups.
Place 4 muffin cups in air fryer basket and bake at 330℉ for 12 to 14 minutes, or until tops spring back when touched lightly.
Repeat previous step to cook remaining muffins.
Notes
If you own an extra large capacity air fryer you may be able to bake more than 4 muffins at a time. You can space them close together, but leave enough room for air to circulate around each muffin.
